We are seeking a skilled and creative Sushi Chef to join our culinary team in the beautiful island of Phu Quoc, Vietnam. As a Sushi Chef, you will be responsible for creating exceptional sushi and Japanese cuisine, ensuring the highest standards of food quality and presentation.
• Prepare and serve a variety of sushi dishes, including nigiri, maki, and speciality rolls
• Ensure the freshness and quality of all ingredients, with a focus on locally sourced seafood
• Maintain a clean and organised workspace, adhering to food safety and hygiene standards
• Collaborate with the kitchen team to develop new menu items and seasonal specials
• Train and mentor junior chefs in sushi preparation techniques
• Manage inventory and place orders for necessary ingredients and supplies
• Interact with guests, providing information about menu items and preparation methods
• Adapt traditional Japanese techniques to incorporate local Vietnamese flavours and ingredients
• Minimum 3-5 years of experience as a Sushi Chef in high-volume restaurants
• Exceptional knife skills and proficiency in various sushi preparation techniques
• In-depth knowledge of Japanese cuisine, culture, and dining etiquette
• Strong understanding of food safety practices and current health and hygiene regulations
• Ability to work efficiently in a fast-paced environment whilst maintaining attention to detail
• Excellent communication and teamwork skills
• Creativity and passion for developing innovative sushi dishes
• Proficiency in operating and maintaining kitchen equipment
• Culinary degree or diploma preferred
• Current food safety certification
• Familiarity with local seafood and ingredients in Phu Quoc, Vietnam is advantageous
• Ability to speak English; knowledge of Vietnamese or Japanese is a plus
