We are seeking a knowledgeable and passionate Sommelier specialised in Greek wines to join the opening team of our flagship restaurant in Mayfair.
This internationally renowned modern Mediterranean restaurant group operates 5 restaurants across London and internationally and continues to expand, offering outstanding opportunities for career progression. Our new Mayfair opening will showcase refined Greek and Mediterranean cuisine paired with a carefully curated wine programme.
The restaurant will be busy from day one (80–200 covers per service). We require a confident, technically skilled and commercially aware sommelier who can lead the Greek wine offering with authority and enthusiasm.
The Role
Curate, develop and maintain a premium Greek-focused wine list (including rare indigenous varietals and boutique producers)
Work closely with ownership and Head Chef to design thoughtful food and wine pairings
Deliver exceptional tableside wine service and guest education
Manage wine stock, ordering, cellar organisation and supplier relationships
Train and mentor FOH team on Greek grape varieties, regions and wine styles
Drive wine sales and maximise GP through strategic recommendations
Maintain high standards of service aligned with fine-dining expectations
About You
Proven experience as a Sommelier in a high-volume, premium restaurant (80+ covers)
Strong, demonstrable expertise in Greek wine regions (e.g., Santorini, Naoussa, Nemea, Crete) and indigenous varieties (Assyrtiko, Xinomavro, Agiorgitiko, etc.)
WSET Level 3 minimum (Diploma or equivalent highly desirable)
Confident communicator with excellent guest engagement skills
Commercially minded with a strong understanding of wine margins and stock control
Organised, detail-oriented and service-driven
Passionate about hospitality, fine food and wine culture
