About Role
Commercial wine production meets luxury hospitality - We’re looking for a Senior Sous Chef who understands both.
Benguela Cove is a working wine estate in Hermanus, producing thousands of cases annually for local and international markets; with an award-winning restaurant and tasting operations.
This role requires a passionate, hands-on Senior Sous Chef who thrives in a high-end kitchen environment and can deliver exceptional dining experiences that match the prestige of the estate. You will support the Head Chef in running a professional kitchen that serves both restaurant guests and high-profile events, while maintaining the highest standards of quality, creativity, and consistency.
Key Responsibilities
Assist the Head Chef in managing all day-to-day kitchen operations
Ensure consistent preparation and outstanding presentation of high-quality dishes
Supervise and mentor kitchen staff during service and prep periods
Maintain strict adherence to food safety, hygiene, and health regulations at all times
Contribute to menu planning, recipe development, and seasonal offerings that reflect the estate’s produce and wine pairings
Monitor stock levels, assist with ordering, and help control food costs
Ensure efficient kitchen workflow and maintain a clean, organised, and safe working environment
Step in to lead the kitchen in the absence of the Head Chef
Train and develop junior kitchen staff to build a strong and skilled team
Requirements
Proven experience working as a Sous Chef (or similar senior kitchen role) in a professional fine-dining or high-volume hospitality kitchen
Strong leadership and people management skills
Ability to perform under pressure in a fast-paced, high-standard environment
Excellent knowledge of food safety, kitchen hygiene standards, and HACCP principles
Passion for quality ingredients, creative presentation, and culinary excellence
Strong organisational and time-management skills
Must have reliable own transport
Availability to work evenings, weekends, and public holidays
Assist with seasonal menus and working with local, estate-grown produce
