We are seeking a Restaurant Manager to join our dynamic team in one of our restaurants and play a key role in supporting the Food & Beverage Function within our organisation. Role Overview:
The Restaurant Manager is responsible for the management of all aspects of the Crane Restaurants’ functions, in accordance with hotel standards. Directs, implements, and maintains a service and management philosophy which serves as a guide to respective staff. Create an Exceptional Memorable Experience (EME) for each and every guest while interacting on a daily basis.
Main Key Responsibilities:
Maintain complete knowledge of:
All liquor brands, beers, and non alcoholic selections available in the Restaurant.
Particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
Designated glassware and garnishes for drinks.
All menu items, preparation method/time, ingredients, sauces, portion size, garnishes, presentation, and prices.
Daily menu specials and 86’d items.
Dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range, and dress code.
POS and manual system procedures.
Daily house count, arrivals/departures, and VIPs.
Scheduled in-house group activities, locations and times.
And strictly abide by state liquor laws/regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk driving.
Establish par levels for supplies and equipment. Complete requisitions to replenish shortages or additional items needed for the anticipated business.
Meet with the Chef to review daily specials and 86'd items; update board throughout shift and ensure that staff is aware of such.
Periodically check with the Front Desk to review updates on house count and arrivals.
Assign work and side duties to staff. Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations which compromise the department's standards and delegate these tasks.
Anticipate heavy business times and organize procedures to handle extended waiting lines.
Required Skills & Qualifications:
Ability to provide legible communications and directions.
Compute basic arithmetic.
Knowledge of variable food service styles.
Be a clear thinker, analyze and resolve problems while exercising good judgment.
Ability to prioritize and organize work assignments and delegate work.
Familiarity with food and beverage cost controls.
Work cohesively with co-workers as part of a team.
Maintain confidentiality of guest information and pertinent hotel data.
Ability to input and access information in PMS.
Desired Qualities:
Must be in good physical condition.
Endure various physical movements throughout the work areas.
Remain in stationary position for prolong periods throughout work shift.
Must be able to walk, lift, stretch, push, and bend.
