As our Fishmonger, you will:
• Source, select, and handle a variety of fresh fish and shellfish, ensuring the highest quality and freshness for our culinary creations.
• Prepare and portion seafood according to recipes and specifications, showcasing your expertise in filleting, skinning, and deboning fish.
• Collaborate with the culinary team to develop innovative seafood dishes and specials that highlight seasonal ingredients and culinary creativity.
• Maintain cleanliness and organisation in the fish preparation area, following food safety guidelines and best practices for seafood handling.
• Stay informed about sustainable fishing practices, seafood sourcing, and seafood trends to enhance the resort’s seafood offerings.
• A minimum of 2-5 years of experience as a fishmonger, seafood specialist, or in a similar role involving seafood handling and preparation.
• Expertise in fish filleting, shellfish shucking, and seafood presentation techniques.
• Strong knowledge of seafood varieties, sourcing methods, and quality standards.
• Excellent organizational, communication, and problem-solving abilities.
