Role Overview

The F&B Manager oversees the full spectrum of food and beverage operations, including restaurants, bars, in-room dining, and events, ensuring flawless, consistent service and strict adherence to hygiene, safety, and operational standards. Acting as the hotel’s primary F&B ambassador, the Manager drives guest engagement, handles VIP needs, and ensures seamless collaboration across all departments. Works closely with the Executive Chef on menus and concepts, maintains quality across all offerings, and leads revenue, cost, and inventory management to achieve financial objectives. Responsible for recruiting, training, and developing the F&B team, while ensuring effective communication, accurate reporting, and full operational compliance.

Key Accountabilities

• Oversee daily operations of all F&B outlets, including restaurants, bars, in-room dining, and events.
• Ensure flawless service execution, consistency, and high standards across all outlets.
• Act as the primary F&B ambassador, engaging personally with guests and enhancing their experience.
• Manage VIP arrangements, special requests, and service recovery with professionalism and discretion.
• Collaborate with Guest Relations and all hotel departments to ensure seamless guest experiences.
• Implement and maintain food safety, hygiene, and sanitation standards (ISO 22000).
• Ensure compliance with SOPs, operational standards, and local regulations.
• Work closely with the Executive Chef to develop menus, seasonal concepts, and culinary initiatives.
• Monitor and uphold quality, presentation, and consistency of all culinary and beverage products.
• Drive revenue growth through menu engineering, upselling, promotions, and cost control.
• Manage budgets, inventory, and financial performance to meet or exceed targets.
• Recruit, train, supervise, and motivate F&B leadership and service teams.
• Conduct performance evaluations, coaching, and development plans to foster team growth.
• Maintain clear communication through briefings, meetings, and cross-department collaboration.
• Ensure accurate reporting, documentation, and compliance with internal controls and audits.


Requirements:
• Previous experience as an F&B Manager or Assistant F&B Manager in a luxury hotel, resort, or high-end dining environment.
• Strong knowledge of fine dining service standards, wine and beverage management, and contemporary culinary trends.
• Degree or diploma in Hospitality, Tourism, or a related field.
• Excellent command of English; knowledge of additional languages is considered an asset.
