Job Description
SWOT Hospitality, a leading hotel management company specializing in the development and operation of high-end hospitality properties,
is looking for a F&B Cost Controller to join our team in our new project The Fiction at Marousi,
ROLE FUNCTIONS
• Monitoring daily food and beverage costs, ensuring accurate and timely data entry across all outlets.
• Reviewing purchase requests, verifying specifications, quantities, and pricing before submitting them to procurement.
• Tracking and reconciling receiving reports, transfer slips, and outlet consumption records to maintain accurate inventory figures.
• Conducting routine spot checks in storerooms, kitchens, and bars to verify stock levels, usage patterns, and adherence to control procedures.
• Analyzing variances between actual costs and budgeted or theoretical costs, preparing initial summaries or findings for management review.
• Maintaining and updating recipe costing sheets and POS item mappings, ensuring pricing accuracy and alignment with current cost structures.
• Monitoring wastage logs, breakage reports, and promotional activities, highlighting irregularities or trends that may require managerial attention.
• Assisting in preparing weekly and monthly cost reports, dashboards, or key metrics for the Cost Control Manager and senior leadership.
• Coordinating with storekeepers, outlet managers, and the finance team to resolve discrepancies in invoices, inventory counts, or documentation.
• Supporting periodic stocktakes by organizing count sheets, participating in counts, and performing basic reconciliations afterward.
• Ensuring compliance with company cost control policies and procedures, helping reinforce correct processes across F&B departments.
Requirements:
• Relevant experience in procurement/purchasing or cost control within the hospitality industry.
• Proficient in MS Office and other relevant software.
• Good knowledge of the English language.
