This is an exciting position within Ennismore’s growing portfolio of all-inclusive brands and will play a key role in launching two new brands with refreshed brand identities to the market in 2026.

Park Royal is a beloved vacation name in Mexico, and this role presents an opportunity to build on that success while evolving the brand to carve out a unique position in a popular all-inclusive market.
Rixos is a successful brand already established across the Middle East and Europe, and this is an important milestone in the brand’s global expansion.
• Proven experience as a Director of F&B in luxury resorts, 5-star hotels, or high-end lifestyle brands.
• Strong expertise in multi-outlet operations, luxury dining concepts, and high-volume banquets.
• Demonstrated success in revenue generation, P&L management, and cost control.
• Exceptional leadership, communication, and team-building skills.
• High standards for service, presentation, and guest experience.
• Fluent in English; additional languages are an advantage.
• Ability to work in a fast-paced, high-volume, luxury environment with international client.
• F&B strategy development and operational leadership.
• Menu engineering, culinary trends, and beverage program management.
• Revenue management, cost control, and P&L accountability.
• Luxury guest experience design and service standards.
• Team leadership, talent development, and performance management.
• Collaboration with Sales, Marketing, and Revenue teams for business optimization.
• Awareness of global luxury dining and hospitality trends.
