Le Chef de Partie Pâtisserie est chargé, durant une mission intensive de 3 mois, de renforcer les compétences techniques et organisationnelles de l’équipe pâtisserie. Il développe les standards de production pour les banquets, optimise les recettes de petits et grands gâteaux, et met en place des méthodes de travail durables pour garantir qualité, régularité et efficacité. Responsabilités clés

1. Développement des compétences de l’équipe

• Former les pâtissiers et commis aux techniques essentielles :• petits gâteaux (entremets individuels, mignardises, verrines)
• grands gâteaux (entremets, layer cakes, pièces montées simples)
• production banquet (desserts en grande quantité, régularité, organisation)

• Mettre en place des ateliers pratiques et sessions de démonstration.
• Évaluer les compétences initiales et suivre la progression de chaque membre.

2. Standardisation & Optimisation

• Créer ou améliorer les fiches techniques (recettes, grammages, méthodes).
• Définir des standards de présentation adaptés aux banquets et événements.
• Optimiser les processus de production pour gagner en rapidité et constance.
• Mettre en place un système de mise en place clair et reproductible.

3. Production & Supervision

• Assurer la qualité visuelle et gustative des produits.
• Participer à la production lorsque nécessaire, en montrant l’exemple.

• Diplôme en pâtisserie (CAP, BEP, BTS ou équivalent).ou experience de 5 ans en patisserie d'hotel
• Expérience confirmée en hôtellerie haut de gamme ou en production événementielle.
• Expérience en formation ou en développement d’équipe fortement appréciée.
