We are seeking a skilled and efficient Part-Time Chef De Partie to join our dynamic kitchen at Seapoint Golf Links, Newtown Termonfeckin, Co Louth.
The Chef de Partie is responsible for the preparation of high-quality meals by company standards, and menu specifications. Reporting to the Head Chef, the successful candidate will be responsible for the preparation of meals, while meeting the required safety, hygiene and quality standards.
Key Responsibilities
Executes food production activities, e.g. HACCP cleaning, cutting, marinating, seasoning, cooking of food items etc.
Correct food storage (e.g. maintaining tidiness, chilling, deliveries - following the first in – first out principle).
Day-to-day production and service in the kitchen which includes the preparation, cooking and correct storage of all food preparation.
Portion control of stock usage for the daily service and functions.
Adhere to the controls of Hazard Analysis Critical Control Point (HACCP) - chefs and kitchen porters, fire safety, grease trap, and pest control manuals.
Executes countermeasures in production in case of customer complaints.
The practice of temperatures for defrosting, cooking and chilling, fridges, and cleaning and documenting this information daily.
Ensures that Hazard Analysis and Critical Control Point (HACCP) regulations are adhered to.
Documents food safety procedures and workplace safety procedures.
Conducts quality checks of goods received, documenting all deliveries according to HACCP regulations.
Ensures compliance with recipe specifications and presentations.
Performs other related duties as assigned or requested.
Key Requirements:
2 years of experience as a Chef De Partie or in a similar role.
Ability to work in a fast-paced environment.
Strong organizational skills and attention to detail.
Excellent communication skills.
Basic knowledge of food safety and hygiene practices
Fully HACCP Trained would be an advantage but if not, full training will be given.
Flexibility to work various shifts, including weekends and holidays.
