Tamarind Mediterranean Restaurant in the prestigious Nusa Dua resort destination is seeking an experienced Chef De Cuisine to lead our culinary operations and kitchen team. In this pivotal role, you will oversee all aspects of food preparation, kitchen management, and culinary innovation while maintaining the highest standards of quality and excellence. You will be responsible for creating memorable dining experiences that showcase authentic Mediterranean cuisine with a contemporary flair.
• Lead, mentor, and supervise kitchen staff, fostering a collaborative and professional work environment while providing training on culinary techniques and restaurant standards
• Develop, design, and execute innovative Mediterranean menus that reflect seasonal ingredients, culinary trends, and guest preferences
• Ensure consistent food quality, presentation, and adherence to established recipes and cooking standards
• Maintain strict food safety, sanitation, and hygiene protocols in compliance with local and international regulations
• Manage kitchen inventory, food costs, and ordering procedures to optimize profitability without compromising quality
• Oversee kitchen operations, including equipment maintenance, workflow optimization, and station management
• Collaborate with front-of-house management to ensure seamless service and guest satisfaction
• Source and evaluate local Indonesian ingredients while maintaining Mediterranean culinary authenticity
• Minimum 10 years of professional culinary experience, with at least 3 years in the similar level capacity
• Exceptional in English both written and spoken. A sound understanding of Bahasa Indonesia is preferred
• Extensive expertise in Mediterranean cuisine and cooking techniques
• Proven experience managing and leading kitchen teams in high-volume or fine dining environments
• Strong knowledge of food safety standards, sanitation protocols, and kitchen health regulations
• Proficiency with professional kitchen equipment and culinary tools
• Demonstrated ability in menu development, food costing, and inventory management
• Excellent organizational and time management skills
• Strong communication and interpersonal skills with the ability to motivate and develop staff
• Experience working in luxury hospitality or resort settings (preferred)
• Familiarity with local Indonesian ingredients and markets (preferred)
• Knowledge of wine and beverage pairing (preferred)
• Flexibility and adaptability to work in a multicultural environment
• Passion for culinary innovation and continuous improvement
• Strong knowledge in HACCP and certified in Servsafe or equivalent
