At Mercure Melbourne Doncaster, our Food & Beverage offering is where hospitality truly comes alive. We are seeking a passionate and driven Assistant Food & Beverage Manager / Restaurant Manager to support the leadership of our F&B operations and help deliver seamless, memorable guest experiences.
Reporting to the Food & Beverage Manager  this is an excellent opportunity for an emerging leader or experienced supervisor ready to step into a broader leadership role within a dynamic hotel environment.
Key Responsibilities
• Support the management of Food & Beverage operations across the hotel, ensuring smooth day-to-day service delivery.
• Maintain Mercure’s high standards of guest experience, quality, and service excellence.
• Work closely with the Executive Chef and F&B leadership team to deliver exceptional menus and service execution.
• Lead, motivate, and develop team members, fostering a culture of engagement, accountability, and continuous improvement.
• Assist in managing rosters, labour costs, stock control, and operational efficiency.
• Monitor guest feedback and assist in implementing improvements to enhance satisfaction.
• Support the execution of functions, events, and high-volume service periods.
• Ensure compliance with health & safety, food safety, and licensing requirements.
• Build positive relationships with guests, suppliers, and internal stakeholders.
• Proven experience in a supervisory or assistant management role within Food & Beverage or restaurant operations.
• Strong understanding of high-volume service, events, and multi-outlet environments.
• A hands-on leadership style with the ability to inspire and guide a diverse team.
• Experience in managing labour, stock, and service performance.
• Passion for food, beverage, and delivering exceptional guest experiences.
• Excellent communication, organisational, and problem-solving skills.
• Flexibility to work across a rotating roster, including evenings, weekends, and public holidays.
